Sugar Cookies

Pecan Sandies
This recipe is from Wil Mooney at Brothers Moon restaurant in Hopewell Borough NJ.  It was printed in the Times Wed., Feb 24, 2009

Yield 4 dozen cookies

1 pound butter
1 cup sugar
1 teaspoon salt
2 teaspoon's vanilla extract
4 cups flour
1 cup pecans

Beat butter, sugar and salt until fluffy.  Add vanilla, then flour, then pecans.  Roll into logs, wrap in waxed paper and chill overnight.

When ready to bake, preheat oven to 350 degrees.  Cut the cookies 1 inch thick and place in ungreased baking sheet.  Bake 20 minutes.

My twist:
Use 3 cups of flour and 1 cup of almond meal.   Good way to sneak nuts into little ones.
